What are your 2013 GOALS?

  Helllooooooo my pretty little bliggity bloggers! I hope you are all having an amazing Sunday. Mine has been filled with this wonderful little thing called family time. *sigh* It is quite fantastic. Starting the day with the whole family at church is always a good way to guarantee that your day will be amazing. =)
  Today, I urge you to think about your goals for this year. Lets just throw out the word resolution. Ew. Bleh. An almost sure-fire way to make sure something doesn't get accomplished is to call it a New Year's Resolution. Soooo.... we are going to have 2013 GOALS. I hope that everyone has at least one goal this year of being healthy. I don't really care about being "skinny". Please, for the love of Pete, don't tell me that you have "being skinny" on your list of to-do's this year. Skinny is a ridiculous word, and to be completely honest, it irritates the crap out of me when people say they wanna be skinny. Now, don't get me wrong, I used to be one of those people. BUT, being healthy and fit is SO much more important. Getting littler in size is a added plus of being fit and healthy. So, let us write down a list of goals. Start small, short term, and then go up to long term. Little milestones are a good way to keep on track. Make sure you accomplish your goals one by one. You can do it!
  On to the yummy goodness of the day. I found this recipe in my Eat Like a Dinosaur cookbook. Yet another thing you'd be wise to buy. Now, as I told you in my last blog post, I have an over abundance of ham in my freezer, so today's recipe, once again, is a hammy one. =) The original recipe calls for bacon. Mmmmmm bacon. Make it either way, they're both DELISH!

Sweet Quiche

Ingredients:
  • 1/2 lb nitrate-free bacon, diced (I used about a pound of ham)
  • 2 apples, peeled and diced (I used green, use whichever color you prefer)
  • 1/2 tsp cumin
  • 2 cups spinach
  • 4 eggs
  • 1/2 cup full-fat canned coconut milk
  • 1/2 tsp salt
  • 1/4 tsp pepper
Instructions:
  1. Saute' chopped bacon over medium-high heat until fat begins to render, about 3 minutes.
  2. Turn heat to medium and add apples and cumin to bacon.
  3. Cook and stir occasionally until apples soften, about 5 minutes.
  4. Add spinach and keep tossing until it begins to wilt, about 2 minutes - remove from heat and let cool for 5-10 minutes.
  5. In a bowl, combine eggs, coconut milk, salt, and pepper - whisk until bubbly.
  6. Lay vegetable mixture into greased pie pan.
  7. Pour egg mixture over vegetables.
  8. Bake for 15 minutes at 425 degrees, then turn oven down to 300 degrees and bake for 30 minutes.
  9. DEVOUR. =)

    For some reason, my computer isn't allowing me to upload the pic. Hopefully I'll get it fixed soon! I promise, I wouldn't lead you astray when it comes to food. Try it, you'll like it. =) Cale even ate the spinach in it, which is unusual for a 3 year old... at least my 3 year old.
