Today, I urge you to think about your goals for this year. Lets just throw out the word resolution. Ew. Bleh. An almost sure-fire way to make sure something doesn't get accomplished is to call it a New Year's Resolution. Soooo.... we are going to have 2013 GOALS. I hope that everyone has at least one goal this year of being healthy. I don't really care about being "skinny". Please, for the love of Pete, don't tell me that you have "being skinny" on your list of to-do's this year. Skinny is a ridiculous word, and to be completely honest, it irritates the crap out of me when people say they wanna be skinny. Now, don't get me wrong, I used to be one of those people. BUT, being healthy and fit is SO much more important. Getting littler in size is a added plus of being fit and healthy. So, let us write down a list of goals. Start small, short term, and then go up to long term. Little milestones are a good way to keep on track. Make sure you accomplish your goals one by one. You can do it!
On to the yummy goodness of the day. I found this recipe in my Eat Like a Dinosaur cookbook. Yet another thing you'd be wise to buy. Now, as I told you in my last blog post, I have an over abundance of ham in my freezer, so today's recipe, once again, is a hammy one. =) The original recipe calls for bacon. Mmmmmm bacon. Make it either way, they're both DELISH!
Sweet Quiche
Ingredients:
- 1/2 lb nitrate-free bacon, diced (I used about a pound of ham)
- 2 apples, peeled and diced (I used green, use whichever color you prefer)
- 1/2 tsp cumin
- 2 cups spinach
- 4 eggs
- 1/2 cup full-fat canned coconut milk
- 1/2 tsp salt
- 1/4 tsp pepper
- Saute' chopped bacon over medium-high heat until fat begins to render, about 3 minutes.
- Turn heat to medium and add apples and cumin to bacon.
- Cook and stir occasionally until apples soften, about 5 minutes.
- Add spinach and keep tossing until it begins to wilt, about 2 minutes - remove from heat and let cool for 5-10 minutes.
- In a bowl, combine eggs, coconut milk, salt, and pepper - whisk until bubbly.
- Lay vegetable mixture into greased pie pan.
- Pour egg mixture over vegetables.
- Bake for 15 minutes at 425 degrees, then turn oven down to 300 degrees and bake for 30 minutes.
- DEVOUR. =)
For some reason, my computer isn't allowing me to upload the pic. Hopefully I'll get it fixed soon! I promise, I wouldn't lead you astray when it comes to food. Try it, you'll like it. =) Cale even ate the spinach in it, which is unusual for a 3 year old... at least my 3 year old.
